Jackfruit Mini Pancakes / Jackfruit Paniyaram is a soft and spongy snack. It serves as a good snack or can be served as breakfast. I have used red rice for this recipe along with jackfruit and banana. These mini pancakes tossed in ghee have an extraordinary taste. Addition of cardamom adds in very nice flavour to the pancakes. This is also called as Chakka Nei Appam in kerala.

Jackfruit Mini Pancakes / Jackfruit sweet Paniyaram is a sweet snack.
Ingredients
- 1 Cup Raw Rice
- 4 Cardamom
- 10 Jackfruit Arils
- 1 Banana Small
- 1 Teaspoon Baking Soda
- ½ Cup Jaggery Powder
- ¼ Cup Water
- Ghee For tossing
Instructions
- Soak Raw rice, Urad Dal and Fenugreek seeds at least for 2 hours.
- Heat water and jaggery in a sauce pan. Heat until the jaggery has completely melted. switch off the flame and drain the mixture for any impurities.
- Drain the excess water from rice and add them into a blender. Add in cardamom. Add in the jaggery water and blend them into a smooth paste.
- Add in jackfruit arils and banana and blend them again into a smooth paste.
- Add in 1 teaspoon of Baking soda and mix them gently. Add salt to taste. Set them aside for 10 minutes.
- Heat the Paniyaram pan. Grease them with oil or ghee generously. Spoon in the batter. Allow them to cook. When cooked the Paniyaram would not stick to the pan now it is time to reverse the sides. Reverse the sides. Cook again on the other side. Once done remove them from the pan.
- Serve them hot as a snack or as a meal on its own.
Notes
- Oil also can be used for tossing pancakes but ghee gives a very good flavour.
- Banana can also be replaced with grated coconut.
- Since the batter is sweet the Pancakes tend to burn easily. It is good to cook them in low flame and cook with the Paniyaram pan covered.
