June is back, the summer vacation is over and Schools are open. Me and my little girl are back to our routine school days. I am going go share more lunch box recipes that i am going to pack for my little girl. First thing is i did not want to miss the Raw Mango Rice / Mangai Sadam as mangoes are still available. Have to wait a year long to taste this awesome seasonal fruit again. Tangy and crunchy variety rice, perfect for lunchbox. Raw Mango Rice / Mangai Sadam
Raw Mango Rice / Mangai Sadam is an easy lunch box recipe.
Servings: 2
Ingredients
- 1 Cup Boiled Rice / Steamed Rice
- ½ Cup Raw Mango Grated
- 1 Tablespoon Oil
- ½ Teaspoon Mustard
- A spring Curry Leaves
- 2 Dry Red Chillis
- ¼ Teaspoon Turmeric Powder
- A Pinch Asafoetida
- Required Salt
Instructions
- Heat oil in a wok. Add in mustard and allow it to splutter.
- Add in peanuts and roast well.
- Add in red chilli, curry leaves. Saute for 2 mins.
- Add in grated mango. Add in turmeric powder and salt to taste. The mango mashes easily. Cook until it is cooked well.
- Add in the boiled rice. Mix them well.
- Switch off the flame.
- Tangy and yummy Mango rice is now ready to serve.
Notes
- Peanuts can be replaced by Cashews.
- Cooking oil can be replaced by ghee.
- Few slit green chills can be added to make it flavourful.
