Pudina Chutney / Mint Coconut Chutney is a healthy chutney.

Ingredients
1Cup Loosely packedPudina / Mint Leaves
⅓CupCoconutGrated
1TeaspoonGingelly oil
1Green Chilli
Salt To Taste
Water - As Required
Instructions
Remove the stem from the pudina leaves and soak it in salt water for 10 minutes. Wash them well. Allow to drain the excess water.
Heat oil in a wok. Add in the pudina leaves and start sauting them. Add in the green chillis. Saute until the leaves shrink in size. Switch off the flame and cool down completely.
Add the Sauted pudina leaves, Grated coconut, salt and water as required into a blender and blend them into a smooth paste.
Delicious and Nutritious Mint Chutney is now ready to be served.
Notes
The Key taste for the good Mint chutney is using fresh mint and coconut.
Using aged ingredients gives out a bitter taste to the chutney.
Tamarind/Imli or Lemon juice can also be added as a variation.
Tampering completely optional. Since i sauted the mint leaves in oil i have omitted the tampering.
