Greens are filled with loads of fibre. Arai keerai is also known as Tropical amaranth. Greens contains many nutrients thats not available in fruits and vegetables. Arai Keerai pairs well with garlic and jeera. Even sick people can have arai keerai as part of their diet. Arai keerai is good for skin and hair growth. The Health benefits of arai keerai are endless. Arai Keerai looks like this.
Cleaning and chopping the greens is a bit time consuming. Wash the greens completely before chopping them. Remove the centre portion like in the below image and thicker stems from the greens.

Ingredients:
Arai Keerai - 1 big bunch
Onion - 1
Garlic - 10 pods
Green Chillis - 2
Coconut - ⅓ cup grated
Jeera - 1 teaspoon
oil - 1 tablespoon
Salt to Taste
Step by Step Photos on how to make Arai Keerai Poriyal :
- Remove the top portion and thicker stems from the greens. Chop the leaves.
- Chop onion and garlic. Heat oil in a frying pan. Add Jeera and allow it to splutter. Add onion and garlic and saute until glossy. Add green chillis and saute it. Add chopped greens and saute it for 5 mins. The greens would reduce in quantity.
- Add turmeric Powder, salt to taste and saute for 2 minutes. Add grated coconut and saute it well.
Tips:
- Do no cook the greens covered or it might change in color.
Serving Suggestion:
Arai Keerai stir fry is served as a side dish for lunch along with sambar. My personal favorite is having arai keerai poriyal with fish curry. Sometimes with steamed rice and ghee.
