Jackfruit Seed Stir Fry
Ingredients
To Pressure Cook
- 1 Cup Jackfruit Seeds
- salt to taste
- Water as needed
Jackfruit Stir Fry
- 1 tblspn Oil
- 1 tsp Fennel Seeds
- 1 Onion Chopped
- 2 Sprig Curry Leaves
- 1 Tomato Chopped
- 2 tsp Ginger Garlic Paste
- ½ tsp Turmeric Powder
- ½ tsp Pepper Powder
- ½ tsp Chilli Powder
- ½ tsp Coriander Powder
- salt to taste
Instructions
To Pressure Cook
- Slice the jackfruit seeds into 4 pieces vertically and remove the whitish skin.
- Add them into a pressure cooker. Add in salt and required water.
- Pressure cook for 2-3 whistles. switch off the flame and allow the pressure to release on its own.
- Drain the excess water and set aside.
For Jackfruit seed Stir Fry
- Heat oil in a wok. Add in Fennel seeds and allow them to splutter.
- Add in onion and saute until glossy. Add in Curry leaves and saute them.
- Add in tomatoes and salt to taste and saute until mushy.
- Add in ginger garlic paste and saute them.
- Add in turmeric powder, Pepper Powder, Chilli Powder and Coriander powder and saute for few minutes.
- Add in the boiled Jackfruit seeds and saute until the masalas blend well.

Tips
- Drying the Jackfruit seeds helps in easy peeling of the skin. When they are fresh the skin is very tight.
- you can even add sambar powder instead of the spice powders that i have mentioned above.
- You can also add some grated coconut as a final step.
Serving Suggestion
Jackfruit Seed Stir Fry tastes best when it is served hot. It can be served alongside boiled rice and rasam or sambar. It can also be served along with curd rice or any variety rice.
