    Lemon Rice and Potato fry is my little girls favourite luchbox combo. Lemon rice can be prepared easily in just 5 minutes. Simple tadka is prepared and lemon juice is added. To add more crunch peanuts or cashews or channa dal is added. The sauce for the Lemon rice will be ready. Simply add in boiled rice and toss them. Lemon rice is now ready. Serve them with any spicy side dish. Due to the sourness of the lemon juice added this rice keeps good for a long time. Hence this can be packed during travel.

    Ingredients

    • 2 Tablespoon Oil
    • 2 Tablespoon Lemon Juice
    • ½ Teaspoon Mustard
    • 1 Tablespoon Channa Dal
    • 2 Tablespoon Peanuts
    • 2 Spring Curry Leaves
    • Asafoetida / Hing a generous pinch
    • Salt to taste
    • 2 Dry red chillis
    • ¼ Teaspoon Turmeric powder
    • 1 Cup Steamed Rice

    Instructions

    • Soak channa dal in water for atleast 15 minutes.
    • Heat oil in a wok. Add in mustard and allow them to splutter.
    • Drain the water and add in the channa dal and the peanuts and saute them until they are sauted well.
    • Add in curry leaves and dry red chillis. Saute them.
    • Switch off the flame. Add in Asafoetida and turmeric powder and stir them.
    • Add in lemon juice and mix them gently. 
    • Add in salt to taste.
    • Finally add in steamed rice and mix them evenly.
    • Easy lemon rice is now ready to serve.

    Notes

    • Peanuts can be replaced by cashews.
    • Dry red chillis can be replaced by green chillis as well.

1.5 tablespoon Oil
1 tsp Cumin
½ tsp Mustard
1 Onion Chopped
1 Tomato Chopped
1.5 Tablespoon Ginger Garlic Paste
1 tsp Pepper Powder
1 tsp Chilli Powder
2 tsp Coriander Powder
1 tsp Garam Masala Powder
¼ Cup Coriander Leaves Chopped
salt to taste
