    Orange Almond Cake / Tea Cake

    Orange Almond Cake / Tea Cake is a delicious and flavourful cake. I simply loved the cake while baking as well as while tasting. Simply loved the packed in citrus flavour. It is simple and easy to make. Its delicious and healthy too. This time i again tried it with Whole Wheat flour. It has all the goodness of Almond, Wheat and Orange. A simple nut cake and a variation from the regular fruit cake made during Christmas. Couldn’t restrict myself from eating the cake. I tried topping it with some almond chunks and it gave me a good crunchy nutty topping. Simply melts in mouth. So the recipe is ready here for you. I have lots of Cakes and Cookies Collection to be posted. Due to festive preparations and stuff could not post it before Christmas. But thats ok am going to post it in sequence.     Orange Almond Cake

    Orange Almond Cake is a nutty and Orangish flavoured Cake

    Ingredients

    • 1 Cup Whole Wheat Flour
    • 3 Eggs
    • ¼ Cup Almond
    • 1 Teaspoon Baking Powder
    • ¾ Teaspoon Baking Soda
    • 1 Tablespoon Orange Zest
    • 2 Tablespoon Warm Milk
    • ½ Cup Butter
    • ⅓ Cup Powdered Sugar
    • 1 Teaspoon Vanilla Extract

    Instructions

    • Preheat the oven to 180 deg C for 10 minutes.
    • Grate the Orange Peel to get the Orange Zest.
    • Add the Almonds into a blender and blend them into a Coarse powder.
    • Add the butter and powdered sugar into a mixing bowl and blend them into a smooth consistency.
    • Add in Vanilla Extract, Orange Zest and blend them into a smooth paste again.
    • Add in the dry ingredients Whole Wheat Flour, Baking Soda, Baking Powder into another mixing bowl and Sift the mixture 2 or 3 times.
    • Add in the almond powder and mix them well.
    • Add the Butter and Sugar Mixture into the flour and start mixing them.
    • Add in 3 eggs in a bowl. Beat them using a hand blender so that they foam up well. Add the foamed egg into the batter mixture.
    • Now mix them all slowly. The dough must be a sticky but a bit runny consistency. If required add some warm milk, to get this consistency.
    • Grease the baking tray with butter.
    • Place the parchment paper at the bottom of the baking tin. Grease the paper with butter. Add the cake batter into the baking tin.
    • Tap the baking tin so that the batter would settle on all the corners of the baking tin.
    • Sprinkle some almond chunks on top of the cake.
    • Place the baking tin into the oven. Bake for 50 minutes at 180 deg C. After the cake is done remove from the oven and leave it to cool down completely. It might take around 30 to 40 minutes.
    • Release the cake from the cake tin. Remove the Parchment paper carefully.
    • eave it in the Kitchen Counter for atleast 4 hours. Slice them and serve.

    Notes

    • You can also soak almonds in water for 15 minutes. Then remove the skin. Again Dry roast them and then blend them into a powder.
    • Do not omit the step of sifting the flour as it would mix well and to avoid any lumps.
    • Baking time differs from different ovens. Check your usermanual before you start  baking.
    • My cake was Moderately sweet. You can adjust the sweetness as per your taste requirements.
    • Do not make the cake batter too watery as it would affect the texture of the cake.
    •  As soon as the cake batter is ready it must be placed in oven so preheat the oven parallely when the cake batter is getting ready.

    4. in another mixing bowl, add in the dry ingredients Whole Wheat Flour, Baking Soda, Baking Powder and Sift the mixture 2 or 3 times. Add in the almond powder and mix. Add the Butter and Sugar Mixture into the flour.

    5. Into another mixing bowl add in 3 eggs. Beat them using a hand blender so that they foam up well. Add the foamed egg into the butter and flour mixture little by little and mix gently so that the air does not escape from the foam.

    6. Now mix them all slowly. The dough must be a sticky but a bit runny consistency. If required add some warm milk, to get this consistency. Grease the baking tray with butter.

    7. Place the parchment paper at the bottom of the baking tin. Grease the paper with butter. Add the cake batter into the baking tin.

      hi. can i skip the almonds and still make the cake as is? or do i need to substitute it with something else?

      yes you can replace the almonds with whole wheat flour and make it as it is
