Pudalangai Poriyal / Snake Gourd Stir Fry is a simple side dish recipe that goes very well with steamed rice and any veg gravy or with rotis. Addition of channa dal adds in extra crunch to the vegetable side dish. Cumin add in good flavour to the recipe. I served this on a lazy week day with rasam and steamed rice.

Ingredients
- 150 Grams Pudalangai / Snake Gourd
- 2 Tablespoon Channa Dal
- 1 Tablespoon Oil
- ½ Teaspoon Cumin Seeds
- 1.5 Tablespoon Channa Dal
- 1 Big Onion
- Salt to Taste
- ¼ Teaspoon Turmeric Powder
- Fistful Curry Leaves
To Grind and Paste
- ¼ Cup Coconut Grated
- ½ Teaspoon Cumin Seeds
- 1 Green Chilli
Instructions
- Soak channa dal in water for 15 minutes.
- Meanwhile chop the snake gourd. Remove the outer skin from the snake gourd. Remove the centre portion from the snake gourd. Chop them into smaller pieces.
- Heat oil in a wok. Add in cumin seeds. Add in channa dal and saute for 2 mins. Add in onion and saute for 2 mins.
- Add in chopped snake Gourd and sprinkle 2 tablespoon of water and cook for few mins or until the snake gourd is cooked soft.
- Add in salt to taste. Add in turmeric powder and Cook until the snake gourd cooks soft.
- Add in contents listed under to grind and paste and blend them into a smooth paste with required water. Add the paste into Snake Gourd. Cook for few more minutes.
- Add in chopped curry leaves and cook for few more mins.
- Simple and Healthy Snake Gourd stir fry is now ready to serve.
Notes
- Soaking dal in water makes it soft.
- while cooking the snake gourd if the mixture gets too dry add in few more table spoons of water and cook until it gets soft.
