Purple Cabbage is commonly known as Red Cabbage. Red Cabbage has relatively high ratio of vitamins and minerals compared to the regular ones. It is also considered as the ideal choice for dieters. A colourful vegetable and i love this vegetable for its colour. Red Cabbage also workes wonders on skin and believed to help prevent cancer. Parathas are indian flat bread. Parathas with Purple cabbage is of course a healthy and nutritious option. I got this recipe from this space. Grated cabbage is sauted with onion and few spices. This is kneaded with whole wheat flour. Grated cabbage is easy to knead hence i have chosen to grate it. It is then kneaded and made into beautiful parathas. These awesome parathas can be a filling lunch or dinner. Here goes the recipe...

Ingredients:
Whole Wheat Flour - 1.5 Cup
Water - as required
Purple Cabbage - 1 cup grated
Onion - 1 Grated
Oil - 1 teaspoon for sauting veggies
Oil - 1 tablespoon for kneading the paratha
Ginger Garlic Paste - 1 tablespoon
Jeera/Cumin Seeds - 1 teaspoon
Garam Masala Powder - 1 teaspoon
White sesame - 1 tablespoon
Coriander leaves - 1 tablespoon chopped
Salt to taste
Step by Step Photos on how to make Red Cabbage Paratha:
- Grate Onion and Cabbage and set aside. Heat oil in a frying pan. Add Cumin seeds and allow it to splutter. Add onion and saute it until glossy.
- Add in the chopped Cabbage. Add in the ginger garlic paste and saute for a minute. Add in the Coriander leaves and saute for a minute.
- Add in garam masala and cook until the raw smell leaves. Add in salt to taste. Give a quick stir. Add in the sesame seeds and give a quick stir. Cook them for 2 minutes. Switch off the flame and allow it to cool down.
- Take whole wheat flour and add required salt. Mix them well. Add in the cabbage mixture and mix well. Add in 1 tablespoon oil and mix well again. Sprinkle water little by little and knead the dough.
- Make it a soft and non sticky dough. Close it and set aside for 30 minutes. Make them into small balls.
- Take a ball flatten it in your palm into a disc shape. Dip this disc shaped batter into the dry wheat flour.
- Flatten them using a rolling pin. Dont worry about the shape. Invert a bowl over the rolled dough and make the perfect round shape.
- After rolling all the dough, heat the iron tawa. Toast the parathas on both sides.
- Use a little butter or ghee while toasting.
- Healthy parathas are now ready to serve.
Tips:
- Grating cabbage and onion makes it easy to knead and roll the paratas.
- Ajwain seeds can also be added.
- While flattening the dough and collecting them one above the other make sure to dust with the dry wheat flour on both sides or the flattened parathas would stick with each other.
- Before toasting the parathas wipe out any dry flour in the parathas.
Serving Suggestion:
Parathas are generally served with Raitha/Yogurt, Pickle, or Gravy based side dishses. I enjoyed these parathas with mushroom peas masala. Will share that recipe tomorrow..
