Mutton Pepper Roast is a simple and easy appetiser with Pepper and Curry Leaves.

Ingredients
250GramsMutton
FistfulCurry Leaves
1TablespoonOil
1Green Chillis
1TablespoonGinger Garlic Paste
½TeaspoonTurmeric Powder

For Roasting and Grinding
1TablespoonOil
1TeaspoonPepper
1TeaspoonFennel Seeds
1Bay Leaves
1Star Anise
2Cardamom
1Black Stone Flower
1Inch Cinnamon Stick
2Cloves
5SpringCurry Leaves
Instructions
Wash and Clean the mutton pieces. Add them into a pressure cooker. Add enough water, turmeric powder and salt and pressure cook for 5 whistles or until the mutton gets tender.
Let the pressure release on its own. Open the pressure cooker. Set it aside.
Heat oil in a frying pan. Add all the ingredients listed under Roast and Grind and saute them until nice aroma comes out.
Switch off the flame and let it cool. Grind them into a fine powder.
Heat oil in another frying pan. Add onion and saute them until glossy.
Add in green chillis and ginger garlic paste.
Saute until the ginger garlic paste gets sauted well.
Add in curry leaves and saute them well.
Add the ground powder into the onion Curry leaves mixture. Saute them until the mixture blends well.
Add in the cooked mutton pieces. Saute until the masala blends well with the mutton.
Delicious Mutton Pepper Roast is now ready.
Notes
Do not add more curry leaves while dry roasting. It would turn bitter.
While dry roasting make sure not to burn the curry leaves or it would spoil the taste of the dish.
Boneless Mutton pieces are very well suited for this recipe.
While sauting if the mutton mixture is very dry add in few spoons of water and saute them.
