Ingredients
To Pressure Cook
250Grams Mutton
1.5CupsWater
½TeaspoonTurmeric Powder
1TeaspoonSalt
For Tampering
1TablespoonOil
15Cashews
1TeaspoonFennel Seeds
1BayLeaf
2Cardamom
2Cloves
½ inchCinnamon stick
3Dry Red Chillis
Other Ingredients
1TablespoonOil
1TeaspoonCumin Seeds
FistfulCoriander Leaves Chopped
2TeaspoonCoriander Powder
1TeaspoonGaram Masala
1TeaspoonRed Chilli Powder
Salt to Taste
1OnionChopped
1TablespoonGinger Garlic Paste
Instructions
To Pressure Cook
Add in Mutton, Water, Salt and Turmeric Powder and pressure cook for 5 whistles in medium flame. Switch off the flame. Allow the pressure to release on its own. Open the pressure cooker and set aside. Remove the excess water and use it to make mutton Curry.
For Mutton Cashew fry
Heat oil in a wok. Add in cumin seeds and allow them to splutter.
Add in onion and saute them until glossy.
Add in chopped coriander leaves and give a quick stir.
Add in mutton pieces and give a quick stir.
Add in salt to taste, turmeric powder, garam masala powder, Coriander powder and red chilli powder. Saute them for few minutes. If the mixture is too dry add in few spoons of water and saute them.
For Tampering
Add oil in a tampering pan. Add in all the ingredients mentioned under to tamper and saute them for few minutes.
Add the tampering mixture into the mutton mixture. Give a quick stir and saute the mutton mixture for few more minutes.
