Instructions
Heat oil in a wok. Add in Cinnamon, cloves, bay leaves, cardamom and fennel seeds. Saute until nice aroma comes out.
Add in onion and saute until glossy. Add in curry leaves and saute them.
Add in tomatoes and salt to taste and saute until mushy. Add in ginger garlic paste and saute them.
Add in chilli powder, coriander powder and turmeric powder and saute until the masalas blend well.
Add in coconut paste.
Add in salt to taste. Cook until masalas blend well. Add in 2 boiled eggs. Before adding eggs slit the on 4 sides.
Cook until the masalas blend well.
Egg Curry is now ready to serve.
Notes
Adjust Salt as per your taste requirements.
If the mixture is very dry sprinkle some water in between.
