Aviyal, This is a Mix veg side dish made with many vegetables, There are a few variations available while preparing aviyal recipe. As mangoes are in season i have made use of it in my aviyal recipe. Hence this is the mango flavoured aviyal recipe. This is a classic recipe that mom made for us in our childhood. This recipe is definitely present on any festivals or any functions. Ingredients:
Mango Small - 1
Raw Banana - 2
Cucumber - 1
Carrot small -2
Drumstick - 1
Yam Medium - 1
Beans - 5
Brinjal - 3
Tomato - 1
Turmeric Powder - ¼ teaspoon
Salt - To taste
To Tamper:
Oil - 1 tablespoon
Mustard - 1 teaspoo
Onion - 1 small or shallots - 8
Curry Leaves - few
For Grinding:
Coconut - ¾ Cup
Jeera - 2 tablespoon
Green Chilli - 3
Step by Step Photos on how to make Mango Aviyal:
- Chop all the vegetable into to streaks.
- Add all the vegetables except mangoes into hot water and start cooking. Add turmeric powder and salt to taste. When the vegetables are cooked upto 50 % add the mango slices and turmeric powder. Grind Coconut, Jeera and greenchilli into a paste. When the vegetbles are 90% cooked add the coconut paste.
- Cook until the coconut blends well with the veggies and the raw smell leaves. Switch off the flame. In another pan add oil. Add onion and curry leaves. Saute them until raw smell leaves. Add this mixture into the veggies mixture.
- Aviyal is now ready to serve.
Tips:
- Vegetables like Beetroot, Cauliflower, Potato, Capsicum, sweet potato, Cabbage, Ladys finger, turnip, radish are not suitable for aviyal.
- Raw Banana and Brinjal plays a major role in aviyal's flavour. These both are a must in aviyal.
- Cucumber can be replaced with Pumpkin, But do not add both together.
- Ashgourd, Jackfruit seeds are other vegetables that can be added.
- Remove the seeds of cucumber and pumpkin and then chop them into pieces.
- Do not add more water while cooking vegetables or the aviyal becomes watery.
- The Aviyal is little watery. But do not add more water.
Serving Suggestion:
Serve Aviyal with steamed rice and sambar, Dal or rasam.
