Ingredients:
To Pressue Cook:
Toor Dal - ½ Cup
Turmeric Powder - 1 teaspoon
Garlic Cloves - 5
Water - 1 Cup
Salt to Taste
To Boil Vegetables:
Drumstick - 1 long
Shallots - 15
Tomato - 1 big
Water - 2 Cups
Salt to Taste
For Sambar Masala:
For dry roasting - Grind and paste:
Coriander Seeds - 2 teaspoon
Coconut - 3 Tablespoon
Channa Dal - 2 Tablespoon
Urad Dal - 1 Tablespoon
Curry Leaves - 2 springs
Dry Red Chillis - 2
Fenugreek - ½ Teaspoon
Peppercorns - 1 Teaspoon
Cumin Seeds - 1 Teaspoon
Grind and paste:
Jaggery - 2 teaspoon
Tamarind - Gooseberry Sized
Asafoetida - ¼ teaspoon
To Tamper:
Oil - 1 teaspoon
Mustard - 1 teaspoon
Curry leaves - a spring
Red Chilli Powder - 1 teaspoon
Step by Step Photos on how to make Drumstick Sambar:
- Add all the veggies and water in a bowl and boil until they are cooked upto 90%. Set aside. Pressure cook the dal with other ingredients listed under "To pressure cook" for 4 whistles. Allow the pressure cooker to release on its own.
- Take all the ingredients listed under sambar masala and dry roast them separately. Cool down. Set aside.
- Once the dal mixture is ready mash the Dal and set aside. Add all the ingredients listed under sambar masala in a blender and blend them into a paste.
- Add the ground masala into a frying pan add Water and start cooking. Allow it to boil.
- Once it starts boiling add the cooked vegetables along with the water. Add salt to taste. Cook until in low flame for 5 minutes. Heat oil in a frying pan. Add the ingredients listed under to tamper and saute them. Switch off the flame and then add the chilli powder.
- Leave it for 2 minutes so that the chilli powder is cooked well. Add the tampering mixture into the sambar mixture. Give a quick stir. Drumstick Sambar is now ready.
Tips:
- Do not roast jaggery it will become watery.
- Take care while adding chilli powder so that the chilli powder is not burnt.
- The sambar is neither watery nor thick so adjust the water content accordingly.
Serving Suggestion:
Drumstick sambar is a Tiffin sambar that can be served with breakfast recipes like Upma, Pongal, Idli and Dosa with other Chutneys. Coconut Chutney is another recipe that can be served alongsoide drumstick sambar
