Pudina Chutney / Mint Coconut Chutney is a very healthy Chutney to be served along with idli, dosa or Upma. This is my favourite chutney. This is a south indian style chutney with Sauted mint leaves and fresh grated coconut. I served this chutney with Paniyarm. Will share the recipe tomorrow. Pudina Chutney / Mint Coconut Chutney
Pudina Chutney / Mint Coconut Chutney is a healthy chutney.

Ingredients
- 1 Cup Loosely packed Pudina / Mint Leaves
- ⅓ Cup Coconut Grated
- 1 Teaspoon Gingelly oil
- 1 Green Chilli
- Salt To Taste
- Water - As Required
Instructions
- Remove the stem from the pudina leaves and soak it in salt water for 10 minutes. Wash them well. Allow to drain the excess water.
- Heat oil in a wok. Add in the pudina leaves and start sauting them. Add in the green chillis. Saute until the leaves shrink in size. Switch off the flame and cool down completely.
- Add the Sauted pudina leaves, Grated coconut, salt and water as required into a blender and blend them into a smooth paste.
- Delicious and Nutritious Mint Chutney is now ready to be served.
Notes
- The Key taste for the good Mint chutney is using fresh mint and coconut.
- Using aged ingredients gives out a bitter taste to the chutney.
- Tamarind/Imli or Lemon juice can also be added as a variation.
- Tampering completely optional. Since i sauted the mint leaves in oil i have omitted the tampering.
