    Red Rice Porridge / Podi Arisi Kanji

    The Red Rice is minimally polished rice hence it is high in nutrition compared to the white rice.The low glycemic index of red rice helps in controlling the sugar level and is good for diabetic patients.  Podi Arisi is broken rice which cooks easily.  Podi Ari Kanji / Red Rice Porridge is a simple tasty Comfort food.  This is a simple means to relish the benefits of red rice in everyday life. Red rice porridge or Broken Rice Porridge  is the first thing that comes to mind while feeding the sick near and dear. It helps in easy digestion and is nutritious too.  Red rice is also a great source of fiber. It flushes out the toxins in the body and eases the bowel movements. This is a hydrating and nourishing dish that can be served on any season. I serve this porridge in breakfast or dinner with  Masala Vada and Bitter Gourd Chips or any pickle.

    Red Rice Porridge / Podi Arisi Kanji

    Red Rice Porridge / Podi Arisi Kanji is a healthy and filling breakfast.

    Ingredients

    • 1 Cup Red Rice Broken
    • 3 Cups Water
    • 4 Fat Pods Garlic
    • Required Salt

    Add Any One of the Following

    • ⅓ Cup Coconut Grated
    • ¾ Cup Coconut Milk
    • 1 Tablespoon Butter
    • 1 Tablespoon Ghee
    • ⅓ Cup Cow’s milk

    Instructions

    • Heat water in a pot. Add salt to taste.
    • Wash and clean the broken red rice.
    • When the water starts boiling add in the washed red rice.
    • When the rice starts boiling add in the garlic pods.
    • When the rice is cooked completely (pick a rice and try mashing it, when you mash rice in your finger it must mash immediately this is the right consistency.) Add in the grated coconut. Cook in low flame for few minutes and switch off
    • Simple and healthy Red Rice Porridge is now ready to serve.

    Notes

    • The Porridge thickens on time, So adjust water accordingly.
    • If you are adding ghee or butter add them after switching off the flame.
    • The amount of water required for cooking rice differs between different types of rice.
    • if you are not able to source out broken red rice, then slightly roast the whole red rice and pulse in a blender to a coarse powder and use it for broken red rice in the porridge.
