Simple Egg Curry / Muttai Kuzhambu is a simple and easy side dish.

Ingredients
- 2 Hard Boiled Eggs
- 2 Tablespoon Oil
- 2 Cinnamon
- 3 Cardamom
- 2 Cloves
- 1 Bay Leaf
- 1 Teaspoon Fennel Seeds
- 1 Onion Chopped
- 2 Spring Curry Leaves
- 1 Tablespoon Ginger Garlic Paste
- ½ Teaspoon Turmeric Powder
- 1 Teaspoon Red Chilli Powder
- 2 Teaspoon Coriander Powder
- 2 Teaspoon Salt
- ⅓ Cup Coconut Grated
Instructions
- Heat oil in a wok. Add in Cinnamon, cloves, bay leaves, cardamom and fennel seeds. Saute until nice aroma comes out.
- Add in onion and saute until glossy. Add in curry leaves and saute them.
- Add in tomatoes and salt to taste and saute until mushy. Add in ginger garlic paste and saute them.
- Add in chilli powder, coriander powder and turmeric powder and saute until the masalas blend well.
- Add in coconut paste.
- Add in salt to taste. Cook until masalas blend well. Add in 2 boiled eggs. Before adding eggs slit the on 4 sides.
- Cook until the masalas blend well.
- Egg Curry is now ready to serve.
Notes
- Adjust Salt as per your taste requirements.
- If the mixture is very dry sprinkle some water in between.
