Take whole wheat flour. Add salt to taste,. Add in water little by little and knead the flour into a smooth dough. Add in oil and knead them again.
Set them aside for atleast 40 minutes by covering with a damp cloth.
Steam or pressure cook potatoes until soft.
Peel them and mash them without any chunks. Add in chopped coriander leaves, Garam Masala and salt to taste and make small balls out of the potato mixture. These balls must be smaller than the wheat balls. Set them aside
Take the kneaded dough and knead them again and make small balls out of them.
Take a ball from the kneaded dough. Flatten it in your palm. Dust on both sides with dry flour. Flatten them. Place a potato ball in the centre. Seal the edges of the wheat flour. Press them in the centre and flatten them.
Roll them with a rolling pin gently so that the stuffing does not peep out. Heat a iron tawa or a griddle. Roast the parathas on both sides by sprinkle few drops of oil or ghee.
Serve them hot with curd or raitha.
Notes
Knead the dough into a smooth dough so that it is easy to roll with the stuffing inside.
Mash potatoes properly and remove chunks, this will help in rolling them out smoothly.
Green chilli, Mint, Ginger Garlic paste can be added for a more spicier taste.
Wrap the parathas in aluminium foil and send as a snack for your kids.
Adding oil or ghee while kneading the dough makes the parathas soft.
Veggies likes carrot, beans and grated cheese can also be added.
