Mint Coriander Rice / Pudina Rice is popularly known as Green Rice in My home. This is one Variety Rice that my little girl loves to carry in her lunch Box. It can be easily prepared in just 30 minutes. This is apt to pack in the lunch box. Mint Coriander Rice / Pudina Rice can be served with any raitha and pappad. Mint Coriander Rice / Pudina Rice
Mint Coriander Rice / Pudina Rice is an easy to make lunch box recipe.
Servings: 2
Ingredients
- 1 Cup Basmati Rice
- 1.5 Cup Water
- Required Salt
- 2 Tablespoon Oil
- 2 Teaspoon Fennel Seeds
- 1 Onion Chopped
- 2 small Tomatoes Chopped
To Grind and Paste
- ½ Cup Mint Leaves
- ¾ Cup Coriander Leaves
- 3 Big Garlic Cloves
- ¼ Cup Coconut
- 15 Cashews
- 1 Green Chilli
Instructions
- Soak Basmati Rice in water for 30 minutes.
- Heat oil in a wok and add in fennel seeds. Saute until nice aroma comes out.
- Add in onion and saute until glossy.
- Add in tomatoes and saute until mushy.
- Grind all the ingredients mentioned in to grind and paste and grind them into a smooth paste. Add this green paste into the pressure cooker.
- Saute until the mixture blends well.
- Add in water. Add in salt to taste.
- Draiin the water and add in the soaked rice.
- Close the pressure cooker and cook for 2 whistles in medium flame.
- Switch off the flame and leave the pressure cooker until the pressure is down.
- Open the pressure cooker. Hot and yummy Mint Coriander Rice is now ready to serve.
Notes
- Soaking Basmati Rice in water is helpful in cooking the rice soft.

- Grind all the ingredients mentioned under to grind and paste and blend them into a smooth paste.
- Heat oil in a wok and add in fennel seeds. Saute until nice aroma comes out. Add in onion and saute until glossy.
- Add in chopped tomatoes and saute until mushy. Add in the green paste.
- Saute until the masalas blend well. Add in the soaked rice.
- Add in water and salt to taste. Give a quick stir.
- Close the pressure cooker and perssure cook for 2 whistles in medium flame. Switch off the flame. After the pressure is down open the pressure cooker.
- Hot and yummy Mint Coriander rice is now ready to serve.
