    Beetroot Poriyal / Beet root Stir fry is one of the easiest and healthiest side dish recipe for rice. Not only the color is vibrant it has many health benefits too. Beetroot is one of the nutritious vegetable. There are any variations in beetroot stir fry, I have shared the beetroot channa dal stir fry recipe here.     Channa Dal Beetroot StirFry / Beetroot Poriyal

    Channa Dal Beetroot StirFry / Beetroot Poriyal is a nutritious and colorful side dish to be served with rice.

    Ingredients

    • 1 Cup Beetroot Grated
    • 3 Tablespoon Channa Dal
    • 1 Onion Chopped
    • 2 Green Chilli
    • 1 Tablespoon Oil
    • Curry Leaves a spring
    • ½ Teaspoon Mustard
    • 2 Tablespoon Coconut Grated ( optional)

    Instructions

    • Soak channa dal in water for 15 minutes.
    • Heat oil in a wok. Add in mustard and allow them to splutter.
    • Add in onion and green chillis and saute them until glossy.
    • Add in curry leaves and saute them.
    • Drain the excess water and add in the channa dal.
    • Cook for few minutes.
    • Add in grated Beetroot and saute until the beetroot is cooked well.
    • Add in salt to taste.
    • When the beetroot is cooked add in the coconut and give a quick stir. Cook for 2 minutes and switch off the flame.
    • Nutritious and colorful beetroot stir fry is now ready to serve.

    Notes

    • Beetroot can also be chopped. Howwver it takes a bit more time to cook.
    • Coconut is completely optional.

1.5 tablespoon Oil
1 tsp Cumin
½ tsp Mustard
1 Onion Chopped
1 Tomato Chopped
1.5 Tablespoon Ginger Garlic Paste
1 tsp Pepper Powder
1 tsp Chilli Powder
2 tsp Coriander Powder
1 tsp Garam Masala Powder
¼ Cup Coriander Leaves Chopped
salt to taste
