Jack Fruit is a delicious fruit. It has a pleasant odour. Any recipe made with jackfruit would taste heavenly. Jack Fruit Halwa / Jack Fruit preserve / Chakka Varatti is another recipe that tastes heavenly. It is also called as jack fruit preserve(chakka Varatti) which is used to make chakka varatti payasam / Kheer. Will share this recipe soon. The difference between jackfruit preserve and halwa is that halwa is garnished with nuts and dry fruits. The Jack Fruit preserve is not garnished. Otherwise the procedure is the same. Jack fruit preserve is stored in dry air tight containers and stored for future use. Its generally prepared during summer when jack fruit is in season. Ingredients
- 20 Jackfruit Arils Medium
- ¾ Cup Jaggery Powder
- 3 Cardamom
- ¼ Cup Water
- 2 Tablespoon Ghee
- 1 Tablespoon Nuts
- Salt to taste
Instructions
- Add jaggery powder and water in a cooking pan. Start heating it until the jaggery dissolves. Filter it to remove any lumps.
- Heat ghee in a pan. Add the nuts and dry fruits and roast it. Remove the dry fruits from the ghee.
- Remove the seeds from the Jackfruit arils. Grind them into a paste in a blender. Add the paste into the ghee.

- Add Cardamom. Stir continuously, until the mixture reaches the halwa consistency.Garnish with nuts and dry fruits. Jackfruit Halwa is not ready to serve.
Notes
- While cooking the halwa looks like thin. It becomes thicker by time. So switch off accordingly.
- If it is going to be used as a jack fruit preserve garnishing with nuts and dry fruits can be omitted.

- Saute in low flame for 4 minutes. Add the Jaggery syrup into the jack fruit paste. Keep Cooking in low flame.

- Delicious dessert is now ready to serve.
