    Mutton Pepper Roast

    Mutton Pepper Roast is a simple and easy Appetizer. It is a Dry dish. Mutton is pressure cooked and sauted with masala. Pepper and Curry Leaves are the main ingredients that adds in taste to the Pepper mutton roast. The Masalas are freshly roasted, ground and used in the recipe. Curry leaves and pepper adds in a yummy taste to the mutton. That is the key to add in flavour to this dish. It can also be served as a Side for Rice or Roti.(with Updated Pics).     Mutton Pepper Roast

    Mutton Pepper Roast is a simple and easy appetiser with Pepper and Curry Leaves.

    Ingredients

    • 250 Grams Mutton
    • Fistful Curry Leaves
    • 1 Tablespoon Oil
    • 1 Green Chillis
    • 1 Tablespoon Ginger Garlic Paste
    • ½ Teaspoon Turmeric Powder
    • required Water
    • Required Salt

    For Roasting and Grinding

    • 1 Tablespoon Oil
    • 1 Teaspoon Pepper
    • 1 Teaspoon Fennel Seeds
    • 1 Bay Leaves
    • 1 Star Anise
    • 2 Cardamom
    • 1 Black Stone Flower
    • 1 Inch Cinnamon Stick
    • 2 Cloves
    • 5 Spring Curry Leaves

    Instructions

    • Wash and Clean the mutton pieces. Add them into a pressure cooker. Add enough water, turmeric powder and salt and pressure cook for 5 whistles or until the mutton gets tender.
    • Let the pressure release on its own. Open the pressure cooker. Set it aside.
    • Heat oil in a frying pan. Add all the ingredients listed under Roast and Grind and saute them until nice aroma comes out.
    • Switch off the flame and let it cool. Grind them into a fine powder.
    • Heat oil in another frying pan. Add onion and saute them until glossy. 
    • Add in green chillis and ginger garlic paste.
    • Saute until the ginger garlic paste gets sauted well. 
    • Add in curry leaves and saute them well.
    • Add the ground powder into the onion Curry leaves mixture. Saute them until the mixture blends well.
    • Add in the cooked mutton pieces. Saute until the masala blends well with the mutton. 
    • Delicious Mutton Pepper Roast is now ready.

    Notes

    • Do not add more curry leaves while dry roasting. It would turn bitter.
    • While dry roasting make sure not to burn the curry leaves or it would spoil the taste of the dish.
    • Boneless Mutton pieces are very well suited for this recipe.
    • While sauting if the mutton mixture is very dry add in few spoons of water and saute them.

    4. Heat oil in another frying pan. Add onion and saute them until glossy. Add in green chillis and ginger garlic paste.
    5. Add in Curry leaves and saute them.
    6. Add in the ground power from step 3. Saute them well.
    7. Drain the water from the mutton and add in the mutton pieces and cook until the masalas blend well.
