This September is going to be happening month for me as i have signed up for the Mega Blogging Marathon themed "Protein Rich Dishes". This month its all going to be protein rich dishes. Protein Rich! Oh Wait Am not an expert in this. All the source of my knowledge is from the internet. Even i myself is so excited to see how it is going to go. I would love to make anything Non Veg food and it is full of protein too. But this time I wanted to strictly stick to Vegetarian protein rich recipes. Potato and Mushroom Masala is the first dish that i have made for this theme. Todays star ingredient is Mushroom. Yes it is rich is Protein and has multiple health benefits. Lets enjoy this Simple dish that can be prepared under half an hour.

Mushroom Potato Masala
Mushroom Masala is a Creamy and Tasty recipe to be served with Rotis.
Ingredients
- 3 Small Potatoes
- 200 Grams Button Mushroom
- 1.5 Teaspoon Red Chilli Powder
- ¼ Teaspoon Turmeric Powder
- Required Water
- 1 Tablespoon Oil
- 1 Star Anise
- 1 Bayleaf
- 2 Cloves
- 1 inch Stick Cinnamon
- 1 Teaspoon Kasoori methi
To Grind and Paste
- 15 Cashews
- 1 Onion Big
- 3 Small Tomatoes
- Required Salt
- 1 Tablespoon Oil
- Required Salt
Instructions
- Pressure Cook or steam potatoes until soft. Peel them chop them and set them aside.
- Clean and chop Button Mushroom. Soak cashews in hot water for 10 minutes and set them aside
- Heat oil in Wok. Add in chopped onion and saute until glossy. Add in chopped tomatoes and salt to taste and saute them until mushy.
- Set them aside until they cool down completely. Add them into a blender along with cashew and blend them into a smooth paste.
- Heat oil in another wok. Add in bay leaves, cinnamon, cloves, fennel seeds and star anise.
- Once nice aroma comes out add in the copped mushroom and saute them.
- The mushrooms release water saute until the water disappears.
- Add in the chopped potatoes. saute for 1 minute.
- Add in the blended tomato paste and required water. Give a quick stir,. Add in Chilli powder and turmeric power. Add in salt to taste. Cook until the masalas blend well.
- Switch off the flame. Garnish with Kasoori Methi.
- Creamy and Tasty Mushroom Masala is now ready to serve.
Notes
- While blending tomato and onion do not add water as the gravy would get watery.
Step by Step Photos on how to make Potato Mushroom Masala
- Steam or Pressure Cook potatoes until soft. Peel them and Chop them into pieces. Soak Cashews in hot water for 10 minutes.
- Heat oil in a wok and saute onion until glossy. Add in tomatoes and salt and saute until glossy.
- Clean and chop the mushroom. Heat oil in a Wok. Add in Fennel Seeds, Star anise, Cinnamon and cloves and saute until nice aroma comes out. Add in mushrooms and saute them. Mushroom releases water. Cook until the water disappears.
- Add in the chopped potatoes. Saute for few minutes. Blend the tomato mixture with cashews into a smooth paste and add them into mushrooms. Add in required water.
- Add in Chilli powder and turmeric powder and required salt. Cook until the masalas blends well. Switch off the flame. Garnish with kasoori methi.
- Creamy and tasty Mushroom Potato Masala is now ready to be served.

We Sindhi's use a lot of potato and mushroom combination, but the gravy is different . Like your version of Mushroom aaloo, looks fantastic.
