MurungaiKeerai Muttai Poriyal / Egg Drumstick Leaves Stir Fry is a yummy side dish.

Ingredients
- 1 Cup Drumstick leaves
- 1 Tablespoon Oil
- 1 Teaspoon Urad Dal
- ½ Teaspoon Mustard Seeds
- 2 Dry Red Chillis
- 1 Onion Chopped
- 3 Tablesoon Coconut Grated
- 2 Egg
- ½ Teaspoon Black Pepper Powder
- Salt To Taste
Instructions
- Heat oil in a wok. Add in mustard and urad dal. Allow them to splutter. Add in dry red chillis. Add in onion and saute them until glossy.
- Add in Drumstick leaves and start sauting them.
- Sprinkle few tablespoons of water and keep sauting until the leaves are cooked soft.
- Add in grated coconut and saute for few mins until the coconut blends well with the green leaves.
- Move the sauted drumstick leaves to the sides. Add in 2 eggs.
- Add in salt and Pepper powder.
- Saute the eggs until they are scrambled completely.
- Delicious Drumstick leaves egg stir fry is now ready to serve.
Notes
- Some Varieties of Drumstick leaves have a mild bitterness on its own.
- Remove the stalks from the leaves as they are hard to eat and digest.
- Do not skip the coconut as it is required to balance the bitterness in the leaves.
- Preparing this recipe in a earthenware pot makes it more flavourful.
