Malabar Chicken Curry

Malabar Cuisine is a has a distinct taste and aroma. Malabar Chicken Curry is one such delicious recipe. Malabar Chicken curry is made by roasting authentic kerala spices with roasted coconut. It is one of the most delicious curries that i love to have on a leisurely sunday afternoon or when my loved ones visit us or during any special occasions. Malabar chicken curry is a rich and creamy gravy, perfect with rotis or a bowl or rice.

Malabar Chicken Curry is a delicious recipe to be had with steamed rice or roti.

Ingredients
  • 500 Grams Chicken
  • 1 Teaspoon Chilli Powder
  • 1/2 Teaspoon Turmeric Powder
  • 2 Tablespoon Coconut Oil
  • 1 Teaspoon Cumin Seeds
  • A Spring Curry Leaves
  • 1 Onion
  • 2 Tomatoes Small
  • 2 Green Chillis Slit
  • Required Water
For Roasting and Grinding
  • 1/2 Cup Coconut
  • 1.5 Teapoon Fennel Seeds
  • 1 Tablespoon Coriander Seeds
  • 2 Dry red Chillis
  • 2 Tablespoon Ginger Garlic Paste
Instructions
  1. Chop Onion and tomato. Slit the green chilli and set aside.

  2.  Dry roast each ingredient listed under to roast and grind separately.

  3. Roast the coconut at last as it releases some moisture at times. Cool down the ingredients. 

  4. Add them into a blender with required water and blend them into a smooth paste.

  5. Heat oil in a wok and add in cumin seeds. Allow them to splutter. Add in onion and saute until glossy. Add in curry leaves

  6. Add in green chilli and saute them. Add in tomatoes and salt to taste and saute them until mushy. 

  7. Add in ginger garlic paste and saute until nice aroma comes out.

  8. Add in the Blended coconut paste. Add required water.

  9. Add in washed and cleaned chicken pieces. Give a quick stir. Close the wok with a lid and cook until the chicken is soft. Stir occasionally.

  10. Delicious and aromatic Malabar chicken Curry is now ready to be served.

Recipe Notes
  • Green Chillis, red chillis are used for this recipe. Do not omit any of them as they are required for the flavour of this gravy.
  • This is a gravy type recipe so adjust the water accordingly
  • Coconut oil is one key ingredient to bring in taste. If you are not used to cook with coconut oil then replace it with cooking oil
  • Roasting and grinding the masalas fresh is another secret of the creamy and tasty gravy.
