    Mutton Kolas are yummy appetizers. They are favourite snacks for many. Mutton Kola is a popular dish in the Chettinad cuisine and is made during any special occasions. It is a real treat for non veg lovers. Mutton Kola is prepared from mutton mince meat and mixed with masalas and deep fried in oil. Biryani is a delicious savoury rice. Biryani with Mutton kolas is a real delight. This delicious biryani recipe is prepared in dum method. I have used milk for the Kola Masala and no tomatoes are added. My little gal told me "Momy this is the best biryani i ever had" That says it all. My happiness knew no bounds. Sharing the recipe here.Mutton Kola Biryani

    Mutton Kola Biryani

    Mutton Kola Biryani is a delicious flavoured Indian rice with Mutton Kola.

    Ingredients

    For Cooking Rice

    • 1 Cup Basmati Rice
    • Required Water
    • 1 Bay Leaf
    • 1 Inch Sixed Cinnamon
    • 2 Cloves
    • 1 Star Anise
    • Required Salt

    For Kola Urundai

    • 250 Grams Mutton Mince Meat
    • 2 Tablespoon Oil For Sauting
    • Required Oil For Deep Frying
    • 1 Teaspoon Fennel Seeds
    • 1 Onion Chopped
    • 1.5 Tablespoon Ginger Garlic Paste
    • Fistful Mint Leaves Chopped
    • Fistful Coriander Leaves Chopped
    • ½ Teaspoon Turmeric Powder
    • 2 Teaspoon Coriander Powder
    • 1 Teaspoon Chilli Powder
    • 1 Teaspoon Garam Masala Powder
    • 2 Tablespoon Gram Flour
    • Required Salt

    For the Biryani Dum

      For Sauting Onion

      • 1 Tablespoon Ghee
      • 1.5 Onion Chopped

      For the Kola Masala

      • 2 Tablespoon Ghee
      • 1 Bay leaf
      • 2 Cloves
      • 1 inch Cinnamon
      • 1 Star Anise
      • 1 Big Onion Chopped
      • Required Salt

      For Saffron Milk

      • Fistful Mint Leaves
      • Fistful Coriander Leaves
      • 2 Tablespoon Ginger Garlic Paste
      • ½ Teaspoon Turmeric Powder
      • 1 Teaspoon Chilli Powder
      • 2 Teaspoon Coriander Powder
      • 1 Teaspoon Cumin Powder
      • ¾ Cup Milk
      • ½ Cup Milk
      • 1 Teaspoon Saffron

      Instructions

      For Cooking Rice

      • Take Enough water in a pot. Bring the water to boil. Add in washed and cleaned basmati rice. Add in Spices like Bay Leaves, Cinnamon, Cloves and star Anise.
      • Allow the rice to cook until 90 %. Drain the excess water and remove the added in whole spices. Set the rice aside until layering for Dum.

      For Saffron Milk

      • Soak the saffron in warm milk and set aside for 15 minutes so that the saffron petals infuses with the milk

      For the Mutton Kola Balls

      • Heat oil in a Wok.
      • Add in Fennel seeds and saute until nice aroma comes out.
      • Add in onion and saute until glossy.
      • Add in Ginger Garlic Paste and saute until nice aroma comes out.
      • Add in Mint and Coriander leaves and saute them.
      • Add in Turmeric Powder, Chilli Powder, Garam Masala Powder and Coriander Powder and saute until the masalas are cooked well. If the mixture is very dry add in few tablespoons of water.
      • Add in Mince Mutton and Saute them. Cook until the mutton is cooked well. If required only them add few tablespoons of water. Cook until the mutton is cooked completely. Switch off the flame and cool down the mixture.
      • Pulse the mixture in a blender into a coarse paste.
      • Add in gram flour and mix it gently.
      • Make small balls for the mixture. 
      • Heat oil in a wok and deep fry the balls.
      • Place them in an absorbent paper so that the excess oil is absorbed.

      For Sauting Onion

      • Heat Ghee in a wok. Add in onion and saute until the onion starts browning.

      For Kola Masala

      • Heat Ghee in a Wok. Add in Cinnamon, Cloves, Bay Leaves and Star Anise. Saute until nice aroma comes out.
      • Add in Onion and saute until glossy.
      • Add in Ginger Garlic Paste and saute until it cooks well.
      • Add in Mint and Coriander Leaves and saute well.
      • Add in Turmeric Powder, Chilli Powder, Cumin Powder and Coriander Powder. Cook until the masalas blend well.
      • Add in the milk and cook for few minutes. 
      • Add in Kola balls and give a quick stir. Cook for few minutes. Switch off the flame.

      For Layering in Dum

      • Heat an empty pressure cooker. 
      • Layer half of the rice in the pressure cooker.
      • Next Layer the Kola Masala on the rice.
      • Next Layer the remaining rice in the Kola Masala.
      • Layer the Deep fried Onion.
      • Pour the Saffron Milk on top of the rice. 
      • Close the pressure cooker but do not use the cooker weight.
      • Cook in low flame for 20 minutes. Switch off the flame. 
      • Delicious Mutton Kola Biryani is now ready to serve.
      • Open the pressure cooker just before serving.

      Notes

      • Since this is a Dum biryani there is no strict water measurement while cooking rice. The excess water is drained.
      • This can also be done using Chicken Mince Meat.

      Mutton Kola Biryani

      Step by Step Photos on how to make Mutton Kola Biryani

        For Cooking Rice

      1. Heat water in a bigger pot for rice. Add in the rice and allow it to cook soft. Add in Bay Leaves, Cinnamon and Star anise. Add in salt to tastestep 1
      2. When the rice is cooked up to 90 % remove the excess water and remove the spices added.step 2
      3. For the kola Balls

      4. Heat oil in a wok. Add in fennel seeds and saute until nice aroma comes out. Add in onion and saute until glossy. Add in Ginger Garlic Paste and saute until nice aroma comes out.step 3
      5. Add in chopped Mint and Coriander leaves. Saute for a minute. Add in Turmeric Powder, Chilli Powder, Garam Masala powder and Coriander Powder.step 4
      6. If the mixture is very dry sprinkle few spoons of water. Add in salt to taste. Cook until the masalas are cooked well. Add in the Washed and Cleaned mutton kheema. Give a quick stir. Cook until the mutton is cooked well. Once done switch off the flame and cool down the mixture. step 5
      7. Pulse the mutton mixture to get a coarse paste. Transfer the paste into a bowl. Add in Gram flour. step 6
      8. Sprinkle few spoons of water if needed. Make small balls out of the mixture. Heat oil in a wok for deep frying the kola balls. Deep fry and remove them from the oil and place them on an absorbant paper for the excess oil to be removed.step 7
      9. For sauting Onion:

      10. Heat Ghee in a wok. Add in onion and saute until it starts browning. Remove the onion and set it aside. This is used for sprinkling on top of the biryani.step 8
      11. For the Kola Masala:

      12. Now in the same pan add in ghee and add in the spices like bay leaves, Cinnamon, cloves and star anise. Saute until nice aroma comes out. Add in onion and saute until glossy. Add in Ginger Garlic paste. Cook for few minutes.step 9
      13. Add in mint and coriander leaves and start sauting them. Add in turmeric Powder, Chilli Powder, Coriander Powder and Jeera Powder. Saute them. Add in milk and keep cooking.step 10
      14. Add in salt to taste. Cook until the masalas blends well. Add in the Kolas and cook for 2 minutes and switch off the flame.step 11
      15. For the Biryani Dum

      16. For layering the dum i have used my pressure cooker. Heat the empty pressure cooker. Layer half of the rice in the pressure cooker. Place the Kola masala over the rice.step 12
      17. Layer the remaining rice over the kola masala. Now layer the sauted onion over the rice.step 14
      18. Place the saffron petals in Warm Milk and set aside for 15 minutes. Now pour this milk on top of the rice mixture.step 13
      19. Close the lid of the pressure cooker but do not use the weight of the pressure cooker. Cook in low flame for 20 minutes. After 20 minutes switch off the flame. Open the pressure cooker only before serving.step 15
      20. Delicious aromatic and flavourful Mutton Kola Biryani is now ready to serve.Mutton Kola Biryani
