Sweet Rava Pongal / Sooji Sakkarai Pongal. A simple and easy pongal. A Simple Variation from the regular Sakkarai(sweet) Pongal made with raw rice. This is even more easier to prepare and consumes very little time than the Sakkarai(Sweet) Pongal made using rice. Coconut milk and jaggery are the main ingredients that give in that awesome taste. Jaggery and Coconut Milk Combined gives out an unique and awesome taste. Rava pongal has the goodness of both jaggery and coconut milk. Rock Candy/ Kalkandu Pongal, Aval Sakkarai Pongal and Sweet Wheat Pongal / Wheat Sakkarai Pongal are other sweet pongal recipes found in this space. Traditonal Sakkarai Pongal is made during the festival day of pongal. Otherwise these pongal recipes can be made as an after meal dessert. They can also be served as a any time snack.

Sweet Rava Pongal / Sooji Sakkarai Pongal
Sweet Rava Pongal / Sooji Sakkarai Pongal is an easy alternate to the regular sakkarai Pongal prepared during the pongal festival. It can be served as an after meal dessert too.

Ingredients
For Jaggery Syrup
- ¾ Cup Powdered jaggery loosely packed
- ½ Cup Water
For Cooking Moong Dal
- ¼ Cup Moong Dal
- 1 Cup Water
- 3 Cardamom Crushed
- A Tiny Pinch Edible Champor
Other Ingredients
- 1 Cup Sooji/Rava
- 1 Cup Water
- A Generous Pinch Salt
- 3 Tablespoon Ghee
- ¾ Cup Coconut Milk
- A Generous Pinch Salt
Instructions
For Jaggery Syrup
- Add water, jaggery powder, cardamom and edible camphor in a bowl and start heating. Heat until the jaggery and the edible camphor dissolves.
- Switch off the flame and cool down this mixture. Drain for any impurities and set it aside.
For Cooking Moong Dal
- Add in moong dal and water in a pan and cook them until the dal is cooked mushy. If using a pressurecooker then pressure cook dal for 3 whistles in medium flame.
For Pongal
- Add in ghee in a wok and heat it.
- Add in cashews and saute them. Keep sauting until they start browning. Remove them from the ghee and set them aside.
- Add in rava into the same ghee and roast them until the aroma of rava comes out.
- Add in the cooked moong dal paste and give a quick stir.
- Add in salt to taste and water. Give a quick stir
- Once all the water evaporates add in the Jaggery syrup. Mix them gently.
- Add in the milk and keep stirring until the pongal consistency is reached.
- Finally garnish with the cashews.
- Delicious Sweet Rava Pongal is now ready to serve.
Notes
- Using Powdered Jaggery is easy so it melts in water easily.
- While cooking the dal in a pan cook them closed to save cooking time.
- If the Pongal is too dry then add ½ cup of water and cook them.
Step by Step Photos on how to make Sweet Rava Pongal / Sooji Sakkarai Pongal:
- Dry roast the moong dal. Add in water and cook until the dal cooks mushy.
- Heat Ghee in a Wok. Add in cashews and saute them until they start darkening. Remove the cashews from the wok.
- In the same Ghee add in Rava/Sooji and dry roast them.
- Now add in the cooked dal and mix them gently. Add in 1 Cup of water and give a quick stir.
- Keep stirring until all the water evoparates. Add in the jaggery syrup. Mix them gently.Add in a generous pinch of salt.
- When the water starts evoparating add in the Coconut milk.
- Keep cooking until all the moisture disappears. Finally garnish with the roasted cashews.
- Delicious Rava Pongal is now ready to serve.
Rava Pongal can be enjoyed as an after meal Dessert.
