    Bottle Gourd Kurma or Lauki Kurma or Surakkai Kurma is a healthy recipe to be shared along side chapathi. This is an absolutely flavourful and delicious recipe. This recipe is prepared by cooking bottlegourd with Spices and coconut.

    Ingredients

    For Coconut Paste

    • 10 Almonds
    • 1 tblspn Poppy Seeds
    • ½ Cup Coconut Grated

    For Kurma

    • 1.5 tblspn Oil
    • 1 tsp Fennel Seeds
    • 1 Onion Chopped
    • 1 Tomato Big
    • 2 Green Chilli
    • 1 Cup BottleGourd Chopped
    • Salt to taste
    • ½ tsp Turmeric Powder
    • 1.5 tsp Garam Masala Powder
    • Coriander Leaves for Garnishing
    • salt to taste

    Instructions

    For Coconut Paste

    • Soak Almonds and Poppy seeds in hot water for 30 mins.
    • Peel the almonds and add into blender.
    • Add in Poppy seeds and grated coconut. Add in required water and blend into a smooth paste. Set it aside.

    For Kurma

    • Heat oil in a saucepan. Add in Fennel Seeds and allow it to splutter.
    • Add in chopped onion and saute until glossy.
    • Add in Tomato and salt to taste. Saute until the tomato gets mushy.
    • Add in chopped bottle gourd. Saute for few minutes.
    • Add in Turmeric powder and Garam Masala Powder. Saute until the masalas are cooked well.
    • Add in the coconut paste. Adjust the water and allow it to boil.
    • Garnish with Coriander leaves. Switch off the flame.
    • Bottle Gourd Kurma is now ready to serve.

    For Coconut Paste
    1. Soak almonds in hot water for 30 minutes. Peel the skin. Add them into a blender.

    2. Soak poppy seeds in hot water for 30 mins. Add them into a blender.

    3. Add in the grated coconut.

    4. Add in required water to blend the items into a smooth paste.

    5. Blend into a smooth paste and set it aside.

    For Kurma

    6. Heat oil in a wok.

    6. Saute until nice aroma comes out.

    7. Add in chopped onion and saute them until glossy.

    8. Chop tomatoes into small pieces and add them.

    9. Add in salt to taste. Saute until the tomatoes are mushy.

    10. Add in green chillis.

    11. Add in Peeled and chopped Bottle Gourd. Saute for few minutes.

    12. Add in Turmeric Powder.

    13. Add in Garam Masala Powder.

    14. Mix gently. Allow the masalas to cook well.

    15. Add in the coconut paste.

    16. Cook until the masalas are cooked well.

    17. Garnish with coriander leaves.

    Delicious Bottle gourd kurma is now ready to serve.

    Tips

    1. The Badam/Almond in this recipe can be replaced with Peanuts or Cashews.If using peanuts, roast them remove the skin and use it for kurma.
    2. If using Badam soak it in hot water for 30 mins peel the skin and use for coconut paste.

    Serving Suggestion

    Serving kurma with Rotis is a satisfying meal. It can be served alongside tiffin recipes like Idli, Dosa, Idiyappam and Pooris.
