Avarakkai or Broad beans is a protein rich vegetable. Broad Beans Stir Fry / Avarakkai Poriyal is One of the apt side dishes with rice and simple rasam. Before preparing the recipe make sure to cup the edges of the Broad Beans and chop them into thin slices that makes the vegetable more interesting while consuming. Finally i have added coconut so that it brings in a nice finishing touch to the recipe.

Broad Beans Stir Fry / Avarakkai Poriyal is a simple and easy side dish with rice and Rasam/Sambar

Ingredients
- 1 Cup Broad Beans / Avarakkai Chopped
- 2 Spring Curry Leaves
- ½ Onion Chopped
- 2 Green Chillis
- ¼ Cup Coconut Grated
- 1 Tablespoon Oil
- ½ teaspoon Mustard
- Required Salt
Instructions
- Heat Oil in a wok.
- Add in mustard and allow them to splutter.
- Add in onion and allow them to splutter.
- Add in Green Chillis and Curry Leaves. Saute them for few minutes.
- Add in chopped Broad Beans saute them. If the mixture is very dry add in few tablespoon of water and cook them.
- Add in salt to taste.
- When the vegetable is cooked completely add in coconut and saute for few minutes. Switch off the flame.
- Broad Beans Stir Fry / Avarakkai Poriyal is now ready to serve.
